Tropical Dragon Fruit Smoothie

Dragon Fruit Smoothie Recipe:

1/2 frozen dragon fruit (1/2 cup diced)

1/2 frozen banana (1/4 cup sliced)

1/4 frozen sweet potato (1/4 cup cubed)

5 tbsp vanilla yogurt (2.5 fl oz / 75 mL)

5 fl oz coconut water (150 mL / 10 tbsp)
- 1 mint leaf
Instructions: Wash produce as needed. Cut the dragon fruit in half and scoop out the fruit with a spoon. Freeze the scooped-out fruit. Peel the banana, break it in half, and freeze it. Cut, cook, and freeze the sweet potato. If you buy mint, you may want to freeze the extra leaves for later use, since only a small amount of mint is needed for a smoothie. Once the fruit and potato is frozen overnight, combine all the ingredients in a blender and blend. Enjoy!
